| Vegetable Plants - Peppers Peppers are fast becoming one of the most popular of all are hundreds of varieties available to the home gardener. They come in all shapes, sizes, and colors, and range from the sweetest to downright fiery. One final attribute, most are prolific producers. Peppers enjoy soil with plenty of organic matter, supplemented with a balanced fertilizer. |
| Vegetable Plants - Cucumbers The cucumber is a tender, warm-season vegetable that produces well when given proper care and protection. The vines of standard varieties grow rapidly and require substantial space. When fruit begins setting and maturing, adequate moisture becomes especially critical. For best yields, incorporate compost before planting. The best size to harvest depends on the use and variety. Do not allow cucumbers to turn yellow. The cucumber fruit grows rapidly to harvest size, so check your plants every other day. |
| Vegetable Plants - Eggplant Eggplants can also come in many shapes, sizes, and colors. When harvesting eggplants, they should be shiny and firm, but not hard to the touch. Picking before they are fully grown is fine and will encourage more fruit set. Cut the fruits from the plant, don't pull. Harvested eggplants will store in a cool spot for 1-2 weeks. When cooked, eggplant has a mild flavor and tender, creamy flesh. |

Tomatoes are a warm season vegetable, so if they are planted early keep your eye on night temperatures. |
